Pâtes de fruit are delicious confections made from real fruit puree reductions that are heated and allowed to solidify and then rolled in granulated sugar. The contrast between the citric acids of the fruit and the sweetness of the sugar forms an intense flavor. The density of the pates de fruit comes from the use of pectin as a binding agent. Pectin is a polysaccharide compound that is extracted from the cell walls of fruits. First discovered by Henri Braconnot in 1825, pectin is the main
