Lemon flavoured custards, puddings and pies have been enjoyed since medieval times but lemon meringue pie was perfected in the late 18th century. One of the first known recipes for lemon meringue pie appeared in an edition of Isabella Beeton’s cookery book Household Management, first published in 1893.
