This gâteau was created in the early 1500s by a French pâtissier who worked in the city of Pithivier, south of Paris. During the reign of Louise XIV, the gâteau reached its height of popularity and was exported ad over the country. This take on the French classic incorporates confit chestnuts into the crème d’amande, adding another dimension.
