Mirror Biscuits (miroirs) are deliciously flaky almond biscuits finished with a glaze. The name miroir is French for “mirror” and the biscuit gains its name from the shiny, reflective appearance of the biscuits’ nappage.

  1. Preheat the oven to 350°F (180°C).
  2. Butter and flour a baking sheet (chemiser). Prepare a piping bag with a ⅛ in. (4-5 mm) round tip.
