Similar to matchsticks (allumettes), these pastry sticks (Palmiers and sacristains) are the delicious result of using up the scraps from puff pastry (feuilletage) often referred to in French as les rongnures. Due to the high butter content, making feuilletage can become costly for a pastry chef to produce, so every scrap is used. Both shaping techniques ensure that there are no leftovers!
