According to Pierre Lacam in “Le Mémoriale Historique,” la religieuse was created at Frascati, a 19th-century Paris restaurant that was shut down for gambling. Such immoral beginnings for a pastry so piously named! La religieuse translates as “the nun” and the pastry itself is modeled after the habit worn by nuns.
