The croquembouche is one of the most spectacular and iconic preparations in all of the culinary arts. Literally translated to “crunch in mouth,” this dazzling dessert has been served as a traditional wedding or baptismal cake in France for centuries. The cake consists of a conical tower of profiteroles standing on a base made of nougatine, held together by caramel and royal icing and ornately adorned with decorations, nuts, and chocolate. This type of cake is an example of a “pièce montée,”
