Mocha coffee beans were first discovered by Europeans in the 17th century in the port city of Mocha (in Yemen). The popularity of the mocha bean, with its undertones of chocolate and its medium- to full-bodied taste, was fully entrenched by the mid-18th century. According to Pierre Lacam in Le Mémorial Historique De La Pâtisserie, gâteau mocha was invented by Guignard of the Carrefour de l’Odéon in Paris in 1857.
