While the pavé du roy seems simple enough from its outward appearance, this layered, alcohol-infused chocolate sponge cake will challenge the most experienced pâtissier. The pavé du roy translates literally to “the King’s cobblestones,” and is named for the distinctive pattern running across the top of the cake.

  1. Melt the chocolate and butter together over a bain-marie. Once fully melted, remove from the heat and stir until smooth.
  2. Beat the egg whites (monter les blancs) to medium peaks. Then gradually beat in the sugar until it has all been dissolved completely.
