While the modern parfait has come to mean a dessert of multi-layered ice cream served in a tall, thin glass with lots of toppings, the parfait glacé au café is true to the original parfait. This coffee infused iced dessert was created in the mid-19th century, and early parfaits were made in elaborate molds designed to impress the diner. This deliciously refreshing dessert is well encapsulated by its name, parfait, which is French for “perfect.”
