Figure-conscious women invariably head for Caesar Salad on a restaurant menu because it is light but somehow filling. Properly made - which is rare - it is a delicious combination of crisp and crunchy, mild yet piquant. This version hails from San Francisco where thin equals beautiful. I think you can get away with using less cheese, but it must be freshly grated, likewise tinned anchovies but the lettuce must be hearts of Romaine not crackly, tasteless Webbs Wonder. Ideal as a light lunch.
