This recipe is an Italian-inspired twist on an American classic: griddled cornbread. Cornmeal (in the form of polenta) gives the batter that extra earthy depth of flavor that I love and a dynamic texture when it comes out of the waffle iron. I love these waffles in the morning with coffee and a ton of butter, but they’re also great with a fruit compote, such as the one.
