There is a nice little after-glow of pepper from the breadcrumbs which cuts the richness of the sardines.

Ingredients

  • sardines 8 large
  • preserved lemons 2, roughly chopped
  • cumin seeds

Method

Rinse the sardines under cold running water, rubbing off the scales with your fingers. Using a sharp knife, remove the heads then make a slit down the belly and pull out the innards. Rinse again, making sure the cavities are clean. Blot dry with paper towels.

Mix the preserved lemons with the cumin seeds. Push some of this mixture into the cavity of each sardine along with
