There is a nice little after-glow of pepper from the breadcrumbs which cuts the richness of the sardines.
Rinse the sardines under cold running water, rubbing off the scales with your fingers. Using a sharp knife, remove the heads then make a slit down the belly and pull out the innards. Rinse again, making sure the cavities are clean. Blot dry with paper towels.
