This rehydrating drink is served all over India. Zesty and clean-tasting, it really hit the spot while I was on my travels researching this book. I am convinced the pepper protected me from stomach bugs.
Squeeze the limes extracting as much juice as possible – you need about
Mix in the sugar, salt and plenty of freshly ground black pepper – about 5 turns of the mill. Add ice cubes, then top up with chilled water, either still or sparkling. Taste and add more sugar, salt or pepper, if necessary.
