Pineapple takes on a new dimension served warm and infused with the intense tropical flavours of long pepper and lime. Long pepper is both hot and slightly sweet, with complex floral and fruity notes. Though rarely used nowadays, it was once the pepper of choice and considered superior to black pepper. If you don’t have long pepper, you could stud your pineapple with large Tellicherry black peppercorns but the flavour will be different.
