An irresistible combination of sweet sticky figs, pungent pepper and crisp buttery filo pastry. The pepper flavour is not particularly strident here – sweetness helps tame it. For an extra hit serve with Sweet Pepper Cream.

Ingredients

  • filo pastry three 35 x 46 cm/14 x 18 in sheets (defrosted, if frozen)
  • unsalted butter

Method

Preheat the oven to 220°C/425°F/Gas 7. Line a baking sheet with baking parchment. Carefully unfold the sheets of filo pastry and cut each one into four 46cm/18in long strips. Cover with a clean, damp tea towel to keep them moist and pliable.
