Parmesan and Green Peppercorn Wafers

These are so simple and so quick to make – and so much tastier to serve with drinks than the ubiquitous black pepper crisps. The combination of pungent, slightly herbaceous, green peppercorns and strong-tasting Parmesan works really well.


  • Parmesan cheese 100 g/ oz, finely grated
  • dried green peppercorns 1 tsp, crushed


Preheat the oven to 180°C/350°F/Gas 4. Line a baking tray with baking parchment.

Mix the Parmesan and peppercorns together in a bowl. Make little piles (about 2 teaspoons) on the prepared baking tray, leaving some space between to allow the mixture to spread.

Bake for 3–4 minutes or until bubbling and golden. Remove from the oven and leave for a minute until the wafers have solidified a little. Use a palette knife to ease them off the tray, then place on a wire rack. They’ll become crisp once they’ve cooled down.
