This is everyday bread – it is this above all others which is the staple of the Iranian diet. The first time I had it I actually thought it was cardboard, but it grows on you. And it is incredibly versatile. Lavash and taftoon are basically the same bread, taftoon being just a little thicker. They are both traditionally cooked stuck to the inside of a clay tanoor oven
