This is based on one of my cousin Stephen’s recipes. Poor chap’s a banker, but he really should have been a chef.
I always keep a jar of some sort of pesto in the pantry – it is amazingly versatile. This one with tarragon is useful for all sorts of fish and chicken dishes. The use of dried whey instead of Parmesan is optional – I originally devised it because my mother-in-law loathes cheese with a ferocity which beggars belief. This is a great starter to have on the hoof, at drinks
