After the above experience, I have of course made it my business to discuss the menus from each lorry driver’s itinerary (much to their amusement). For this recipe the driver uses a sort of dried salami, which obviously travels well, but he said that it is just as good with canned luncheon meat...so I suggest you try this with Spam, which is readily available since its relaunch, and similar in flavour to Iranian canned meat products.
