Most dolmeh/dolmades/yemistakia/stuffed vegetables are traditionally filled with a mixture of rice and meat. We’ve filled this one with a mixture of barley and vegetables just to be different. In fact I regard the meat in dolmeh as being largely superfluous, although it is quite a good carrot if you are trying to persuade someone of a nervous culinary disposition to try them for the first time.
