Aubergine Sandwiches

This is a very naughty recipe. I generally hold that fried chicken (and the fast-food outlets that purvey it) is one of the greatest evils facing modern society today, but I have to admit that this dish would be another contender, were aubergines ever to become as popular as chicken.
