This is an essential addition to your barbecue portfolio, with flavour to drool for. And it is really, really easy to make.

Ingredients

  • 2 poussins, skinned and chopped into 4 cm pieces
  • 2 onions, very finely chopped

Method

Place the chicken in a sealable container, and add all the other ingredients. The saffron should be sprinkled on to a saucer of boiling water and allowed to cool before it is mixed in. You only need to add as much lemon juice as it takes to cover the meat – but this probably will be most of the bottle. Mix the ingredients well, cover, and leave in the fridge to marinade overnight.
