Method

Bulghur wheat seems only to be found in the bits of Iran which abut Arabshire – it is more authentically an Arabic/Kurdish ingredient. It is versatile, though, as it’s so quick to prepare, and you can have it hot or as a salad. To enjoy hot, fry 1 bunch of (cleaned and chopped)

Simple to cook and comforting to eat. We had it warm as an accompaniment to an Ottolenghi chicken dish. I prepared it in advance and left it covered, adding the herbs at the last minute.
