This is a great way to use up left-over cooked potatoes (especially those baked in their jackets), although my recipe assumes that you are starting from scratch. If you are using left-overs, just cut the potatoes into wedge shapes and then cook them through in the frying-pan – there is clearly no need to cook for very long or to transfer to the oven.
