Khanum (literally, ‘lady’ or ‘wife’ – in practice the polite way to address any lady) Sohaila is one of my customers. A pretty and gracious lady from the deep south of Iran, she is also a fabulous cook – she has guests week in, week out. And her speciality is fish. She is very modest, so it took me months of cajoling to coax this recipe out of her – she could not see what all the fuss was about.
