This is perhaps my favourite of all of the Iranian pulaos, especially when served with thick, lamby ab-gusht. They are not traditionally served together, but ohmigosh they make a grand combination. But you can serve it with any khoresht you like, and the rice works with wet vegetarian concoctions as well (like the lemony recipe).
