This is a great festive dish, its sweetness adding a degree of opulence. I have suggested making it with lamb here, in the traditional manner, because I think that the cherries perfectly contrast the grease of the lamb. My mother-in-law invariably makes it with chicken, and you could easily layer it up with a moist vegetarian concoction.
