This is a great festive dish, its sweetness adding a degree of opulence. I have suggested making it with lamb here, in the traditional manner, because I think that the cherries perfectly contrast the grease of the lamb. My mother-in-law invariably makes it with chicken, and you could easily layer it up with a moist vegetarian concoction. If you are using a rice cooker, it is best to make the rice by mixing the cherries through at the last minute, and serve the ab-gusht (lamb and stoc
