It is a shame that a lot of vegetarians do not seem to like aubergines, as they really are very versatile, and can easily stand in for meat in a lot of dishes. They are used extensively in Iran; there are all sorts of wonderful regional recipes. In fact, you will find them as a sort of vegetable leitmotif throughout this book.

This particular recipe is to be found across the whole of Iran, although it comes from the north. It is one of those dishes in which it is really easy to over
