This is a very versatile dish – it will go to barbecues or buffet parties with you, or just sit in the fridge like a good little snack. It is best to use the baby aubergines widely available in Continental greengrocers in the spring and summer, but you can use quartered regular aubergines instead if you like. Baby aubergines are not as bitter as adults, so they do not need to be salted first.
