Braised Sweet Gem Lettuce with Sekanjabin

This is a lovely combination. Sweet gems belie their name as they can actually be fairly bitter, but the bitterness is lost when they are cooked in this way. This makes a fine accompaniment to rich meat dishes.

Ingredients

  • 4 sweet gem lettuces
  • 100 ml chicken or good vegetable stock
  • few

Method

Wash the lettuces, removing any mangy bits, but basically leaving whole. Place them in an oven-proof dish, with the sprigs of mint on top, pour the stock over them and drizzle the sekanjabin over everything. Cover the dish with foil and bake in the oven (gas mark 4, 180°C) for around 25–30 minutes. The lettuces should be soft enough to welcome advances from a fork. Serve on a bed of fres
