Have this in hand for unexpected vegetarian visitors. It doesn’t take much time, can be made from whatever you have lurking in your fridge or pantry, and is more exciting than lasagna. It also makes a fine lunch or supper dish for omnivores. I serve this in a big bowl with a thin layer of rice at the bottom and plenty of bread alongside for mopping up.
