This is somewhat of a misnomer. As Europe forbids the import of any milk or animal products from countries outside the Union, we have to make do with pseudo-Tabriz. This is easily done, because in effect it is just a very salty white cheese. The nearest to it that we have found is Bulgarian feta, but in truth any good feta will do the job. This is a rich and impressive salad and makes a good starter.
