Gaz is one of the most popular Persian sweeties. In essence, it is nougat made with pistachios or almonds and rose-water. It comes in two basic varieties – logmeh, which are usually individually wrapped, and ardi, literally ‘floury’, which is usually loose and coated in flour and icing sugar.
