Rice pudding has to be one of Britain’s favourite winter comfort foods. Hot and creamy, with a drizzle of jam or syrup, it is a taste of childhood. Persian rice pudding is quite different, although it occupies the same place in the Iranian culinary heart. Shir berenj (literally, rice milk) is fragranced with spices and served chilled – it thus makes for rather a pleasant pudding for summer.
