This is one classy pudding. It cleans the palate like nothing else I have ever tasted and leaves you feeling invigorated, even after an indecently heavy meal.
Heat about a third of the orange juice with the honey until the latter is quite dissolved. Add it to the rest of the orange juice in a freezer-proof container, and stir in the lemon juice, zest and herbs. Once it is quite cool, cover it and freeze, bringing it out for a good churn after half an hour. It is a good idea to bring it out of the freezer 10 minutes before you wish to consume it.
