Halwa is but the Arabic word for ‘sweet’, and every town, let alone each nation, across the Arab world seems to have a different understanding of the word, or a different recipe to fit it. It can be anything from sponge-cake to nougat – so travellers should be careful what they order. Of course in Europe we normally associate halva with the rich sesame confection made popular by the Greeks and Turks. This is available and popular in Iran, where it is known as halwa konjedi.
