The most famous of the lot. Morello cherries are ready substitutes for sour cherries.
Stone and pick through the cherries, and wash them well.
Boil the water and sugar gently together; when the sugar has dissolved, add the cherries and bubble away for around 15 minutes. Strain through muslin (or a clean, non-fluffy tea-towel), stir in the vanilla essence and leave to cool. Bottle and seal.
