Tomatoes are big in Iran, and so are tomato products. A vast number of families, in addition to making their own pickles and relishes, sundry and make their own tomato purée and from that, a whole range of sauces. At certain times of the year, an aerial view of many Persian villages would yield a sea of red – tomatoes spread out on the rooftops to dry. Sadly we lack the climate (or the flat roofs) to try this at home, but we can still make our own tomato sauce.
