This is one of a number of Persian pickles which should have a ‘best after’ date on it. ‘Vintage’ garlic pickle is prized in Iran and sold at a higher price, much the same as a good wine. Although simple to make, with but three ingredients, the effect is synergistic: the garlic softens the vinegar and the vinegar softens the garlic, until they are transformed into a syrupy, garlicky jam.
