This (without the vodka) is Iran’s favourite jam; the Turks love it too; in fact it is popular throughout the Middle East. The vodka gives it that little bit of extra oomph, and makes it a nice Christmas conserve. You can substitute kirsch or even gin, or just use a little rose-water for a non-alcoholic version.
