My grandmother (who preferred to be known as my sister – it’s a long story) was an adventurous eater, but only really liked proper food with visible edges. Anything that was in too much sauce was deemed ‘slosh’ and thus largely inedible. She would have hated this dish. Oddly enough, most Iranians to whom I have served it actually seem to like it (and they are really not adventurous eaters). It is extremely comforting and extraordinarily filling.
I serve it alongside barbecue
