This simple yet flavorful quinoa recipe is one of our favorites thanks to its versatility. Serve it as a side dish, or use it as a base for bowls and wraps. You can also toss it in salads like The Happy Hippy Quinoa Salad to add more substance and protein.

Rinse the quinoa in a fine-mesh strainer until the water runs clear, then drain well.

In a medium heavy pot, combine the quinoa with the broth, pepper, and herbes de Provence. Bring to a boil over medium-high heat and give the quinoa a stir. Lower the heat until the broth is gently simmering and cover with a tight-fitting lid. Set your timer for 20 minutes and don’t give in to the tempt
