Place a steamer basket in a pot filled with 1 inch (2.5 cm) water. Bring the water to a boil over medium heat.

Cut off the bottom third of the broccoli stem and discard. Cut the crown of the broccoli into 2-inch (5-cm) florets. Peel the remaining stem using a paring knife, then cut the stem into ½-inch- (12-mm-) thick coins.
