The consistency of this dish is thinner and smoother than a traditional mashed sweet potato, but thicker and creamier than a sauce. We love it with our Stuffed Maple-Glazed Acorn Squash, but it also makes a wonderful base layer under sautéed veggies, tofu, or fish. It adds a beautiful pop of color, a ton of flavor, and a boost of fiber and antioxidants to any meal.
