Risotto must be the world’s most elegant comfort food. It’s so satisfying and warming, but also feels like a special occasion dish. The creaminess is achieved by coaxing the starch out the of the grains of arborio rice. You do this by adding hot broth little by little and by stirring often. To get the umami boost that Parmesan traditionally provides, we add a little miso paste and nutritional yeast. It’s all topped off with meaty roasted mushrooms.
