This Parmesan takes just a couple of minutes to make, but adds a wonderfully cheesy, delicious flavor to any soup, pasta, or pizza.
Heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring frequently with a wooden spoon, until soft and translucent but not browned, about 3 minutes. Add the carrot and celery and continue cooking, stirring, for 3 minutes more.
