Lard is enjoying a well-deserved comeback and once again taking its rightful place in kitchens across the country. It’s a superb shortening for baking. The texture and flavor it yields are better than butter. Lard used to be preferred to butter but it lost ground to vegetable shortening, which was successfully marketed as a new baking ingredient after the electric lightbulb rendered wax candles made with vegetable fats obsolete.
