Every nut is a little different, and pecans make a crust that is quite a bit looser than one made with almonds or peanuts. Extra sugar and less caramel compensate for the oils in pecans. This crust is ideally suited for a custard-filled tart with no baking required.

Ingredients

Toasted pecans 2 cups (8 ounces<

Method

  1. Combine the pecans, confectioners’ sugar, and salt in the work bowl of a food processor. Process into a fine meal, about 20 seconds.
  2. Remove the work bowl lid and add the Caramel Sauce 1 tablespoon at a time. Process until the mixture gathers together into a dough.
