Nothing is as simple as Caramel Sauce, and yet it will lift a serving of dessert from the ordinary to something gourmet and photoworthy. We make a ton of caramel in-house at CakeLove—and we do it without copper pots, so you can too.

Method

  1. Combine the sugar and water in a small, heavy-bottomed saucepan. Cook the mixture over low heat until it reaches 340°F (it’s best to use a candy thermometer to get an accurate read of the mixture’s temperature).
  2. Using a wooden spoon or heat-resistant spatula, stir in the cream. Cook until the mixture turns a deep amber color.
  3. Remove the pan from the h
